It is never too late to kick-start your New Year’s resolutions. Local food educator Sapna Von Reich is offering a “Kickstart Your Health” series starting Jan. 25 at the Fort Collins Senior Center. These classes offer a chance to discover optimal foods for weight and blood pressure management. The best part is that class attendees enjoy cooking, tasting delicious dishes in a supportive group setting.
Chickpea Tacos and Avocado Cream are just some of the recipes you will enjoy, tried and tested by the Physicians Committee for Responsible Medicine. The mildly spicy (or not!) chickpea tacos filling is perfect served in taco shells with lettuce, chopped tomatoes, jicama or cucumber. One could also make a burrito, served with rice and toppings tucked into a whole-grain tortilla.

Chickpea Tacos
2 (15-ounce) cans chickpeas, rinsed and drained
2 tablespoons water, plus more if needed
3/4 cup chopped onion
1 cup minced zucchini and/or bell pepper
2 teaspoons chili powder
